Any kind of roughly one inch ball would work. You just need to drill a hole through it and, if you don't have the cotter pin, just use a piece of heavy, stiff wire as an axle, bent over on the outside of the bracket so it won't slip out.
Most hobby shops would have little knick-knacks this time of year that are made of plastic or rubber or wood of about the right size.
I would contact Tech Support at Parallax - I know that they will send you one. In the meantime, Mike has you covered. See the info below from the website.

I would call Parallax Sales, it is not a tech support issue. Tech support is usually for trying to get something to work... sales is for a order related issues.
There are only three sure things in life and, of those three, only one of them (Parallax Customer Service) is good. They are certain to take care of you.
In the meantime, I know you're in a hurry, so go down to your local True-Value/Ace Hardware/Lowe's and ask for a one-inch wooden ball knob. This is designed for use as a drawer pull, and it has a hole drilled part-way through. This is good, because it's very hard to drill a hole through a ball and get it to go where you want. The knob also has a flat on one side, so you may need to get a few washers to use as spacers. If you need the cotter pin, get that, too, while you're there. You will want to finish drilling the hole clear through, the same size as it was started, in order to get it straight. But the hole will be a bit bigger than the cotter pin and will need to be reduced a bit. If you're lucky, the store will have a nylon or aluminum spacer that will do the job. If its O.D. is bigger than the hole, that's okay, since you can always drill the hole larger to accommodate it. (If you get a 1"-long spacer and glue it into the ball, you can forgo the washers for spacing out the flat side.) The other option would be to wrap the cotter pin with tape to build it up.
