I would highly recommend checking out westfw's eagle tutorials on instructables. The first tutorial is on drawing schematics and the second is on doing the actual layout.
Sparkfun.com has some Eagle tutorials as well. With your experience JonnyMac you can probably breeze over some of the electric circuit details and focus on how to use the program.
