It would be good to know what kind of electric motor this is - shaded pole, split phase, capacitor start, etc. ? What are its power demands? All of these factors determine how best to control the speed of an electric motor. Some motor designs cannot be effectively speed controlled.
Also remember that the voltages involved can be LETHAL if you're not careful. I'm sure it goes without saying that saftey is very important, and none of us can be held responsible for what might happen if things go wrong.

The motor is quite significant. Some can be controlled by the same device that dims a light fixture. If that is the case, all you need is a digitally controlled potentiometer connected to your BasicStamp or some other variable resistance scheme that allows digital control.
Whatever you use, 240V is serious wiring. Be sure to clearly lable, fuse, and enclose in a proper housing.
