Quadrature Encoders and BS2s

I'm not finding any useful info on my own, so I'm hoping someone here can give me a hand.
I'd like to interface three quadrature encoders to a BS2PX24. I would like each of these encoders to increase or decrease a 5V signal driving an LED as well as a 5V range ammeter gauge (the ol' needle type).
Although I've done some reading on grey codes and such, I don't have any idea how to implement them. Not only do I need help figuring out the code, but any hardware suggestions to get this set-up running would be GREATLY appreciated!
I have three encoders at my disposal, the P/Ns are:
Bourns PEC12-4225F-N0024
Avago HRPG-AS32#11R
Avago HEDM-5500#B06
