Could a wise gentleman or women point me in the direction for how to log the tilt from a Memsic? I found the StampPlot website but it is so complicated for a beginner such as myself.

Take a look at the "What's a Microcontroller" & "Process Control" manuals, which can be downloaded from the Parallax website. They have examples of using StampPlot to collect data.

With StampPlot Pro:
Open it
Select "No Frill Plot"
Use View-->Configuration if you need to change the comm port.

In the BASIC Stamp, send data such as:
DEBUG DEC Tilt,CR

Close DEBUG Window

On StampPlot, F6 to connect, F7 to plot

From Logging menu select Save Data to File

When ready, open file from Logging menu with Open Data File
