Touch Screen and Increased Memory

I am working on a project in which I need to connect a color touch screen to a microcontroller/processor and I thought I could use a Parallax board to do so.· I also need to store about 50 pictures and sounds so I will need to increase the memory I believe of the board.· Is this project possible with a parallax board, and if so, which board should I use and where can I obtain an additional or increased memory device? The project is to be a response system for children with disabilities so I really want to make it user friendly and a quality product.
