Whats the easiest way to use the BS2 for controlling motors and sensors and then feed the info back to a computer?

StampPlot Pro can act as a GUI interface for monitoring or control. There's a couple tutorials posted on the downloads page. Once you get the hang of it, it's pretty easy.
