The AppMod header is a connector found on most of the Parallax development boards. Add ons such as that LCD/button board in your link are designed to plug directly into the AppMod connector.
The holes in the AppMod header connect to pins 0-15 on the Stamp and there are 2 each (I think) for Vss and Vdd. These connections are also available elsewhere on the boards, so you do not have to use the AppMod header.
However, to use an AppMod device anywhere but on the AppMod header, I think you may have to rig up some kind of adapter cable.

Which or what "it" said something about having an AppMod Header? I can ASURE you, it's NOT necessary, although it might be convenient.
