DS2760 Thermocouple Kit questions

Hey! It's been a while since I posted for the last time. I'm graduating this year from highschool.
The reason for this post is that I wanna do for one of my final projects something to represent the variation of material's resistance when the temperature changes. I think the DS2760 Thermocouple Kit·will be usefull. What I want to ask is what is the theory behind it? why does it use two sets of junctions? and how difficult is it to write the code for a BS2SX?
P.S. If any of these questions is alredy answered, please provide me with the link, otherwise I would be most thankful if I get the answer of the questions.

    ·· You are correct in that the Thermocouple Kit measures the voltage drop cause by the change in temperature between two different metals (wires).· The best source of information about this that I can recall is the datasheet for the DS2760, which can be downloaded from http://www.maxim-ic.com

    Maxim/Dallas has a part called the DS2480B: http://pdfserv.maxim-ic.com/en/ds/DS2480B.pdf

    I've not used it myself but one of our customers (an OEM) did before modifying his BS2sx design to the BS2p.

    In case I also·buy a BS2pe I'll be able to make a direct connection, right? Is it also possible for a BS2px to connect directly to 1-wire?

    Yes, all of the "p" family chips have Dallas 1-Wire protocol built in.
