Micro for storing analog information

i am new to using microcontrollers. i am looking for a stamp or Pic controller which can store analog reading from a Field strength meter for about 6 hours during the day and then must have the software and hardware to download this information to a computer through a RS232 or USB port. i will be very grapeful for reply as soon as possible.

    It really matters how often you read the Field Strength Meter, how many digits resolution you have to store, if you want it time-stamped.

    It even matters HOW you read the Field Strength Meter -- does it have an RS-232 output, for instance? Is it outputting an analog signal?
