ADC and accelerometer help

·I am using a high G accelerometer with a max 187 ADC.

My question is how do I take this information and turn it into acceleration?

Using an X-mod I·can get an at rest·reading of about 2543, but varies. When downloaded into Excel I can see the acceleration when graphed, but its all choppy.

I have heard of digital filtering but don't know how it's done.

Any help would be very much apprecieated.

The typical approach is to oversample and then average the measurements. For example, take ten times as many measurements, then devide each set of 10 by 10. Another approach that extends the averaging is to remove the maximum and minimum measurements (and divide by 8 instead).
