I want to thank everyone on the board that helped me finish my project. I am posting a the final code and schematic, for anyone who wishes to build their own. The delay timing could still probably be improved, but works properly most of the time.
This is nice! First for anyone with a visual imparement and also as a way to not have to glance up at a readout when you are holding probes in a very tight or slippery place.
Have you done a PCB layout of this? If anyone will do a layout, I can pretty much assure you a set of boards from the PICList.com PCB contest http://www.piclist.com/pcbcontest and then people can order the boards from Olimex or whereever if they want to make one.

I used the express PCB software to make the schematic and then scanned it and the parts into my mac.
Next, I used photoshop to lay everything out, and finally scaled it up so it would print out nicely. So, if anyone wants the original PCB file, here it is...
