Measuring temperatures > 400F

Hi All,
I'd like to measure temperatures in a stove between 400 and 500 degrees F. Does anyone have any advice? I found the thermocouple on the Parallax website, is this my best option? I haven't built anything to withstand this sort of temperature. My data collector will be outside of the oven, but the sensor will (obviously) be inside. I have a commercial temperature sensor that has a special woven metal jacketed sensor, any idea if I can use something like this as a thermocouple data feed?
Sorry to be kind of vague in my description, I'm really not quite sure where to get started. Any help would be really appreciated.

Please note that the module uses a 1-Wire device and requires a BS2p-family BASIC Stamp module.
