One thing that would have been great is an A/D convertor on board. Overall looks good and I may buy one or two.

One question I have is about the LCD contrast POT. Is it just connected to +5 and ground? The reason I ask this is some of the parallel LCD's I have require a negative LCD contrast bias. I have in the past borrowed negative voltage from the built-in switch capacitor convertor that are on the MAX232. This has worked without any adverse affects to the RS232 as the LCD bias is usually in the uA range.

The reason we didn't put on on is that there is such a wide variety we didn't know which to pick -- so we leave it to you to choose your favorite and put it into the breadboarding area.

Yes, the LCD contrast pin is positive only, so you may not get good results with displays that require negative bias.
