I don't see why it wouldn't be possible. You will probably need to use an external EEPROM to store persistant data (like on the tomagochi how it would repeat phrases that it heard).
A guy asked the exact same thing a few months back, but heck if I can't find the post (don't remember his name or any other particulars about him, other than he was from an asian country, can't even remember which forum it was in).
searching tamagotchi: 0 results, searching pet: no useful results, searching LCD: bingo, go figure. Seems the search engine works much better for frequently used words, of course that means wading through more useless results.
PS what happened to Kramer, haven't seen him post in a while, ahh last post 2/17 thats not too long ago.

This is that guy that asked about tamagotchis a few months ago.
The big challenge is the interface to a graphic LCD.· Conventional tamagotchis have a custom LCD that displays cute animated images.· In order to work around it, you have a great deal of graphic animation to create at a dot-by-dot level program.
After all is said and done, you can buy one in Taiwan for about $30USD or in Hong Kong [wholesale quantities] at $3USD.·
It seems like a good idea, but unless you really have a whole new creative slant to add to the concept - why try?· Just buy one and have done with it.
