How difficult would it be to get the OEM BS2 and instead of using the EEPROM provided, use #602-00013?

The BS2 interpreter is hard coded to only access a 2 KB EEPROM to store programs and data - so installing an 8 KB EEPROM wouldn't help. You can add an EEPROM to the circuit to hold more data (not programs). Another alternative is to use one of the more advanced BS2 modules such as the BS2PE which has 16KB of data space www.parallax.com/detail.asp?product_id=BS2PE
