ADC, most bits?

What's the most accurate ADC out there? I've mostly seen only 8 and 12 bit ones, but have heard of 16's and 18's as well. Does anyone know who makes and where I can get an ADC with the most bits? Are they compatible with the Parallax stamp modules?
