DS2760 wire length?

Hey all,
I've got one of the DS2760 Thermocouple kits
here in front of me, and I'm wondering how many
feet of wire is "safe" between the stamp and the
thermocouple interface?

Can I just use regular phone wire?
Umm, can I use 50' of regular phone wire?
