I'd like to look at both, voltage output and also a 4-20ma output.
Web Searches pull up numerous results but I was curious to what some of you

Can anyone recommend a good, easy to interface, 12 bit Dac for the Stamp?
I'd like to look at both, voltage output and also a 4-20ma output.

Perhaps one of these would fit:
MAX531 / 538 / 539 - Single 12-bit voltage out
DAC7611 - Single serial 12-bit voltage out
DAC7612 - Dual serial 12-bit voltage out
DAC7624 - Quad serial 12-bit voltage out
or
DAC 8501 - Single serial 16bit voltage out, Rail-to-Rail (pretty cheap @ ~
$10)
Haven't used any of them, hope it helps though.....

Analog Devices AD421 is a 16 bit DAC with 3 wire SPI interface and 4-20 mA
output. Also requires an external depletion mode FET (DN25D, ND2020L,
ND2410L, etc) for its power supply section.
It can be loop powered if you want to use opto-isolators on the 3 control
lines. That's how we use it for one of our RTD temperature monitoring systems.
