I've often thought of using a triac on my relay boards, cost and
space savings and all that, but have just never gotten around to
using one with a Stamp.
But, I think there are schematics floating around that allow you to
use a triac with a Stamp.
maybe someone will offer a link ?

dimmer modules, both kit and complete, that are inexpensive and would be
pretty easy to interface to a Stamp. Also, the idea of X10 control was
offered at that time which sounds like a good idea too.
Take a look at these kit dimmer modules, they are not that
expensive at 21-24 dollars, would handle all of the dimming functions for
either 120 or 240 VAC, and any of them could be interfaced to your Basic
Stamp for control. One of them is controlled with a 0-10 VDC input, and it
looks like the others are push-button control.

This last one is more expensive at 59 dollars, but is infrared remote
control as well.

sort of triac opto coupler. The big potted modules with 20 Amp capacity work
great, but you can get little 6-pin DIP's that will drive a few hundred ma
load if that's what you need. These can be had as plain vanilla triacs, if
you want to play with dimming an AC light, or in zero-crossover
configuration, if you want to drive big AC coil contactors and such. You
just use the little triac output to directly driver REALLY BIG triacs. You
need to check the specs, but most of these turn on with only 5 ma of current
or so, which means they could be directly driven by a Stamp IO pin with the
proper series resistor.
I did a quick google on triac opto coupler and came up with this site
http://www.elexp.com/opt_4n25.htm but I'm sure Digikey and everyone else
will have them for a buck or two.
