The tricky problem here is to drive the LCD...
Most graphical LCD's must be driven directly; ie. That the processor must send
it every point on the LCD as a stream of bits, and needs this stream regularly
to refresh the picture.
Not only that, but the BS2 doesn't have enough RAM to build the datastrings,
either.
I can see two possibilities around that:
1. The Amulet kit (see links and docs on the Parallax site)
2. using a Palm Pilot running a front-end program, possibly written in NSBasic
or Hotpaw Basic
(www.nsbasic.com and www.hotpaw.com)
As for measuring the acutal temperatures, that can be done in so many different
ways that I won't even begin to think about it. (Try a search in the archives,
it's a frequent question)

I plan on installing a touch lcd panel in the dash of the car and have an icon
I could click that would display the outside and inside temperature from
temperature sensors connected to the computer.

What Monitor ?
Are you talking about the newer cars with large, flat panel display ?
If you are talking about an independant computer for a car, it is a
neat hobby toy.
You can do outside temperature with frozen road warning. distance to car in
front or behind for traffice as well as parking. motor temperature, even a foggy
windshield sensor.
But, I have not heard of anyone tapping into one of the large flat
panel displays (yet)
