Sensor output is analog. it must go to an ADC for conversion to digital.
All sensors could go to a multi-channel ADC which is connected to a Stamp. Then

one Stamp can handle all the sensors and serout the digital information to
    the transmitter.

No you only need one stamp to receive the information and process it.

    Example
if you use Holtek HT-12E Encoder IC from www.rentron.com,
http://www.rentron.com/PicBasic/RemoteControl.htm on to the sensor inbetween the
transmitter you can set an address which is specific to that sensor. This way
allows for many sensors broadcasting on the same frequency.

You should use Holtek HT-12D Decoder IC from www.rentron.com for the receiver
and have the stamp change the address lines on the decoder inorder to choose
which sensor is to be read in.

I have done this very thing for one of my past projects that required
information to be sent wirelessly to the receiver.

    Hope this helps
