is there a way to find out a stamps code? maybe by placing the chip
or board in a special holder that will show the code on your computer

to 'dump' the eeprom tokens over the serial
port.
IF you had an OEM version, and IF you had
a socketed EEPROM, and IF you had an off-line
reader for the EEPROM, you could dump
the 'Basic Tokens' to your PC.
You'd then have to write a decompiler for the
tokens -- since the tokenization and all is
parallax proprietary information, this might
be hard to do. A decompiler does not exist
currently, and Parallax would take a dim
view of creating one.
So NO, 'reverse engineering' a Stamp's code
is really not practical. Note this protects
people's intellectual property when they
deliver a project using a Stamp, as well as
Parallax's intellectual property.

2002. Don't bet the farm that your Stamp's code is safely out of
reach of others. To my knowledge, there is no widely available
facility for doing this, however, if that is the point of your
question.
