A Good 16-bit Counter

I have a project that I need at least 3 16-bit counters that I will
be interfacing with a basic stamp MCU. I found the CP82C54 which
matches what I need except it needs over 15 I/O points to control the
IC.
I was wondering if anyone has any recommendations for a 16-bit
counter that requires less I/O?

your own counters using a PIC. The PIC18F252, for instance, has
three built-in, 16-bit counters. Your Stamp could program the PIC to
do the counting and Stamp I/O functions, which could mean using just
one Stamp pin to access the counters in operation. About $15 in
parts.

I'm working on a project that uses the 82C54 PIT with the BS2p24. To solve
the problem of the excessive I/O required by the PIT I use two PCF8574 I2C
8-bit I/O extenders (but the 16-bit versions like the PCF8575 by Philips or
the MCP23016 by Microchip are probably better suited for the purpose).
An alternative is the PCF8583 I2C RTC/counter, that contains a 6-digit event
counter (max. frequency is 1 MHz), as far as I know. But if you try a search
in Maxim or Microchip websites (these two, to say the most popular ones in
my mind), I guess that you can find something more satisfactory to your
needs.
