or if using a ADC you could read voltage from side to side

ping pong ball drill a small hole through the ball insert a resistor into
the center of the ball with the leads sticking out both sides put a small
conductive pad ( tinfoil, brass plates or brass washers ) soldered to the
resistor ends and glue to the sides of the balls then just apply a voltage
to one side and read voltage from other side using a resistor and ADC.
