What would be a good method to measure/monitor volume coming out of say a
walkman or other device that you plug headsets up to?

Is the volume expressed in volts?

    Yes volts.

A typical walkman headset output might be approximately 100 to 6 or 700
    milivolts (0.1 to 0.7 volts)

Don't forget. The volts you will be reading is AC. So, you will need
to rectify the voltage before you try and read it.
