Does anyone know where I could purchase electrodes to place on one's skin in
order to sense the electrical signals that are contracting muscles? If you
don't, could you help send me in the general direction? Thanks.

Sean, go to your local hospital EKG department and find out where they get
the patches for electrocardiograms. They work perfect for skin electrodes.

I told a physician in the ER of my local hospital I needed some for an
experiment. He gave me a handful for free!

Ramsey Electronics sells an ekg kit and extra electrodes are available as a
    stand alone item.

Yeah, now that I think about it, I believe it was Ramsey rather than
Velleman that had the EKG kit.
