You don't mention anything about speed or accuracy...
Here's a couple of ideas:
1. Many moving needle hygrometers today use a human hair.
(When the hair is wet, the scales should read 96%)
This may be difficult to use unless you get hold of long hairs and loop them
a few times.
2. Wood also expands and contracts in a predictable manner, so a piece of
wood and a sliding pot should also work.
Not exactly 'high tech' but should be cheap...

Hello,
Parallax is looking for a low-cost humidity sensor. We'll accept the fact
that precision and cost are trade-offs, too. Our target cost is less than a
buck, including any support circuitry. Can anybody provide some direction on
parts we might be able to use for this purpose?
The application is for a simple project designed for the experimenter,
hobbyist or student.
