The secret is in "multiplexing"
search for some information on this. Sorry I dont have time to expand on it
at the moment.
The "pic microcontroller handbook" has a good example.

person pointed out an LED project that used the Basic Stamp to control a
series of 5X7 Matrix LEDs to create a scrolling sign. I asked for a
schematic, but they couldn't since the person who created it had left the
company and taken all the documentation. I've searched the internet and
Parallaxs' website with no luck.
The closest thing I've found is an article in N&V which was republished by
Parallax in their 2 vol compilation set (Column #73). The project in the
article only uses a single 5X7 LED, I would like to use a few more (5-8);
the store demo used 8.
Any suggestions?
Thanks,
Matt
now, but with a single display. Still in the planning stages though -- gonna
do it with a Stamp I until I get some of the 8-pin AVR processors. I haven't
looked at that N&V article yet, but the biggest challenge is probably the
driver circuit. I'll check out the article tonight.
I suppose you've seen that Digi-Key has a bunch of these displays really
cheap, including super-bright models.
