Grettings,
Being new to the STAMP world, I was wondering if anyone has any
suggestions for what type of opto-isolator would be good for
interfacing with a solid state relay.

None is needed. SSR are, by nature, optoisolators.

Solid state relay is connected directly to the stamp or through a
resistor. For example G3MB-220P-DC5 is a zero crossing solid state relay with
5 VDC input range and 100 to 240 VAC rated o/p load.
