Thermocouple datalogger

Hey guys,
I am new to the stamp community and I have a little project that I
need some help on. I need to make a single thermocouple (type J only)
data logger. So this will need to have one thermocouple hooked up to
it and log the data (at 10ms interval). It would need to store at
most 5000 temperatures (to three decimal places). There must be a
start and stop button. It would then be uploaded into a laptop via an
RS232 cable.
I know enough to know that I will need an A/D converter for the T/C,
and a rather large EEPROM. I think that a BASIC Stamp 2 would be
fine. But I have never really started a stamp project by myself.
Any guidance would be greatly appreciated.
