CRT, VGA, TV For a basic stamp?

I have been trying my darndest to find some kind of video controler for a
micro-controler. I have seen the web site on Pic Pong, however, that
requires alot of processing power, and only for limited graphics. I am also
not looking for one that just does like 20-60 charaters on a TV screen.
The most I have been able to find is that VGA signals are easyer to use than
NTSC, and may require less processing, however the most I found is sorce
code, not alot of how-to or theory:P
Think anyone can help me? I am kind of wanting to built my own game
