I'm after an infrared sensor which will respond to modulated infrared
light by giving a variable output based on the intensity of the
infrared which is hitting it. I've found sensors which will output
just a high or low in the presence of modulated IR, but none that give
variable output based on intensity. This is not for a proximity
application, as there are variable output IR proximity detectors. But
they appear to work on triangulation methods, not by intensity. So
these will probably be of no use. Does anyone know of such a sensor?

sensor which will give a variable output relative to the *intensity*
of modulated IR. At the moment I have a Sharp IS1U60. I know that the
IS1U60 will give a low signal in the presence of a certain intensity
of 38Khz modulated IR light. What I want to know is, does it also give
a variable output, related to IR intensity? Or does it have just two
states - high/low?
According to the datasheet the IS1U60 contains an amplifier, limiter,
demodulator and comparator. Maybe one of those limits the output to
being just on or off?

an IR LED to get a variable output. This list does not allow

Search Google for "IS1U60" and the very first URL to pop up is:

In that datasheet you will find the device delivers only an on/off output.
