6 Pots, 2 Wires and a BS2P40

I'm looking to connect 6 poteniometers to an A to D converter, then send
the info through about 100 to 1000 ft of two conductor cable (can be
twisted pair) and into a BS2P. Is there an IC (or combinations of) out
there that can do this? Does anyone have recomendations on if I should
use Dallas Semiconductor's 1Wire, or I2C, or iButton. I really don't
know which is the best to use. Oh, I also have a BS2p Demo board .
