Is there a list or an easy to find way to find I2C devices? Just looking to see
what is available.

Many manufacturer's websites have parametric search trees which can
be used to figure out what they offer. Linear, Maxim/Dallas and
Phillips are some examples. One of the easiest ways is to figure out
what device you need, then see if they offer I2C. I've found the
Maxim/Dallas site to be very helpful with this. Phillips also breaks
down their I2C offering nicely.
If you need help interfacing a 2-wire device to your Stamp, check out

(basic I2C operation using a serial EEPROM as an example) and
http://www.high-techgarage.com/tutorial/ds1307.php (using a real time
clock as an example).
