While you're in the manual, take a look at the PWM command. With a resistor
and a cap, you can output an analog value from a Stamp pin. For more
precision, you might consider an A2D convertor.

You might also check your display specs. If you have direct control over the
segments, the MAX7219 will probably do the trick.
