If I am using an 8 channel A/D, what what be a good choice for my amplifiers as
far as hardware goes? I am going to have several transducers and probes hooked
to this a/d, and am looking for ic's for my amplifier stage. Do they make , say
a 2 4 or 8 channel instrumentaion amp or would I need 8 independent ones?

Use either 8 independent ones, or if your design warrants it, use only
one with 2 multiplexers on the inputs, one for the + inputs and another
for the - inputs. I'm not aware of any chips with multiple
    instrumentation amps.

I ahve used the BurrBrown MPC507 with great success. It's an 8x1 balanced MUX.
Buffered properly it's basically a straight wire. $12 or so, 3 bit address
control, and available today from digikey.

Burr Brown has a couple of dual instrumentation amps. At least they did a
wile ago. The one I used was the 2141 which has set gains (10, 100 I
think). They had at least one more with variable gain set by resistor.
