An indirect but effective approach would be to switch on the light, and then
use electro-optical techniques to smoothly increase the light intensity.
Possible examples would be a polarization filter for the light, combined
with crossed polarizers. Rotate one of the latter to increase light
intensity. Another approach would be a Kerr cell, which allows electrical
control of light intensity.
