I'm new to stamps but love it already. What is the best source to get
ribbon cables with the square pin conections to hook up the various
peripherals. Is it best to buy the parts and make them myself? Is
there a document describing this process and specific parts?

parts for educators and students at reasonable prices - and still often at
super prices on a halfway-decent inventory.
Next you might try digi-key for a slightly more refined catalog, and then
there's always Jameco for a less complete inventory, but certainly some odd
and otherwise hard to get items, some directly related to Stamps. All have
.com's, and you will find a number of choices for the cables and connectors
you are looking for...
