Hello. Check out the Earth Measurements text written by Tracy Allen.
It is part of the Stamps in Class program. Dallas Semiconductor has a
ready make humidity sensor for $20 at their online store (part of the
iButton site: http://www.ibutton.com).

    By "humidity" do you mean the moisture in the soil, or do you really
    mean the ambient humidity of the air? Those take two very different
    kinds of sensors. Also, if plants, are they in a garden at different
    locations, or in a greenhouse, or pots? How is the water going to be
    delivered, e.g., by drip irrigation etc?
