inner life of plants

Bear with me here, hare-brained scheme to follow...
I've been working lately on a number of art pieces that have various
relationships to plants. While working on that pieces, I've been
thinking a lot that it would be interesting if there were some way to
visualize the inner activity of a plant. Specifically, I've done some
work in the past using electrical stimulation to cause reflexive
muscle response in a performer, and I'm looking to set up a situation
where the activity of a plant controls the (involuntary) movement of
a person.
Does anyone have any experience using sensors that can track dynamic
water flow in plants, specifically interfacing them a stamp?
Thanks,
Mark
