Charts and Graphing software

I need to make a spec sheet for a project I am working on. Included needs to
be timing charts and current to voltage graphs etc much like you see on
component data sheets. Does anyone know of a good software application to do
these type of charts/graphs? I am presently doing them by hand which is a
little time consuming and the end result is not as professional. Thanks for
the help.

I use Excel for most of our graphing. They designed the graphing for
beancounters, but engineering x/y linear/log, etc can be done. Customizing
the graphs simply involves fighting the Microsoft "wizards", and after many
tries, we get what we want. (Sometimes I feel like a dentist pulling teeth
