Digitizing audio stream?

Hi all,

I have a project in mind, that involves digitizing audio, at 8kHz sample
rate, nothing flashy, and sending the audio via serial connection to another
device.

I have seen some ICs from Cirrus Logic and Maxim, but does any of you have
experience with this? Any pointers or suggestions? Other simple ADC circuits
that may do the job?
