Absolute Encoders

I'm interested in hooking up an absolute encoder. In searching the
list, I couldn't find any good starting points to find the best way.
Can someone point me towards the best way to hook one of these things
up? I've seen direct to the Stamp, or some references to a chip that
then talks to the stamp. But there was no mention of keeping it
simple yet functional.
Any help is welcome.
