I'm looking to find a pair of some kick-*** mosfets. I need an N-channel
and a P-channel. Here are some of my criteria, I want high current(20A+)
and high voltage (50v+), low on resistance, and I want to be able to use
them at low voltage levels (6v would be about the lowest). I had my eye on
the IRF540 is there a p-channel that matches this one? What is the lowest
voltage I can use this FET at?

IRF540 probably will not fit to your application, unless you provide a very
very good heat dissipation. Choose a better and improved MOSFET like IRFZ44.
I believe that are not a minimum voltage to be switched. Read data sheet before
and follow the gate voltage recommended. P-Channel MOSFETS are more
difficult to find and a bit more expensive. You may still use a N-Mosfet if
you drive the gate with a especial chip that isolate voltages like a
    opto-photovoltaic driver.
