PIC or Stamp for 2 channel data ACQ to LCD Display

Hello to all.

I am an electronics student looking to make a project for an idea I
have had for some time. I am looking for the easiest solution to
build a 2 channel data reader.

The specifications are for 2 input channels (like stereo) from 10Hz
to 20 kHz. I want to bring them into an ADC then into either a stamp
or PIC. Nowadays I see that some PIC's include a built in ADC. I
want
to convert this data into one channel of raw signal waveform and one
of voltage converted to temperature to an on board LCD display. Picks
are new to me so I figured stamps would simplify my design troubles.

This device will be hand-held and battery powered so it does limit
some types.

Any help or suggestions would be sincerely appreciated.

P.S. Who has the easiest code to learn for programming stamps and
PIC's?

    If you know at least a little C/C++, as many current students do, you
    could save a lot of time by investing in a compiler and programmer for PICs.
    It's better to apply what you already know than to start at the bottom.
