As I had the same idea I can forward my solution to you:

I got some defect LCDs and removed the LED-backlight module and
will use this for the VU-meter elements. Each module is about 100mm x 30mm.
So a VU-Meter with 10 modules is about 1meter long.

    You could get one of those "Test your strength" graphs and hook it up via
    solid state relays from the bar graph controller with red lights...
