I'm trying to setup a really big (about 5-6ft) VU meter for audio, and
I'm trying to figure out the best way to make it so that it's visible
from all sides.. it'll probably be vertical, and free standing. I want
something with the brightness of light bulbs, but the speed and
reliability of LEDs.
any ideas?

This MAY start you out, but that's QUITE some project:

which is a bar dot "graph" display with LED driver outputs. These would
probably have to drive other chips, which, in turn, drive LED clusters. The
LED clusters can be obtained new or surplus. B&G has had them, and MPJA as
well.
The greatest problem I see is the 360 arrangement, but maybe that spinning
bit will get around that. The other alternative is mirrors, and using
optics to get the "surround" view.

Since "really big" is in the eye of the beholder, I suggest a small LCD
worn on a head strap as a heads-up display.
