Is it possible to drive a servo motor until an event (Limit switch, bar code, etc.) occurs?
my stamp is so busy accelerating, driving, and decelerating the servo via PWM that it has no time to "watch" an input pin.

without the Stamp's constant intervention. You set the PWM rate you want on
any channel (8 channels all at the same time are possible) and then it will
continue to run until you change or stop it.
