ADC or PIC for piezo?

The piezo film transducers can be found here ($2.50-7.50):

They work especially well registering a very brief flexion. I haven't
tried them in a continuous mode however I suspect they would not provide
much of anything. My problem is I need to sample very transient pulses
from impacts. I'm concerned that a standard ADC may not be sampling
quick enough to grab the top of the peak. Do you know about any of the
ADCs that "track and hold". I'm not sure exactly what that is or even
if it is overkill. What about the difference in speed between the BS2
and the ADC? I've seen some ADCs that hold the value (read inputs in
parallel) until the stamp can read it. These are all novice questions
as I have never worked with an ADC before. What I would like to do is
test the sensors with an ADC first and then move to a PIC with on-board
ADCs (to replace the stamp) for production. I would love input from
anyone with experience using piezos with the stamp or PIC. Thanks!!
